Kebabs are always delicious, and if you haven’t tried cooking with rabbit yet, I recommend it! Rabbit kebab can be prepared by marinating the meat in tomato or mayonnaise marinade. I prefer to marinate meat in tomato marinade with onions.

To prepare tomato marinade for rabbit kebab, take homemade ketchup; if you don’t have that, use fresh tomatoes or tomato paste (dilute a couple of spoons in 0.5 liters of water). To make the meat soft, I advise you to soak it in cold water for a couple of hours.

Prepare the products according to the list.

We wash the rabbit carcass under running water. We cut off the hind legs first, cutting along the joint.

Cut the carcass in half into 2 parts.

Cut the lower part of the carcass into 4 parts.

From the top of the carcass we cut off the front legs with shoulder blades.

We do this with the remaining top carcass: cut off the neck, divide the rest into 4 equal parts, cutting along the ridge and breast.

Place all parts of meat in a saucepan. Cut the onion into rings, add onion, salt and seasoning to the meat.

Add ketchup and vinegar and mix well. Leave to marinate in the refrigerator for at least 5 hours, I left it overnight.

We string the meat onto sticks along the bone so that the rabbit is better fried.

Fry on the grill until done. Turn over every 4-5 minutes and pour over the ketchup in which the meat was marinated, diluting it in half with water.

Our rabbit kebab is ready. Bon appetit!

RABBIT BAKED ON COALS.

And so, we need:

Medium rabbit carcass
one onion
one head of garlic
approximately 200 gr. sour cream
spices (thyme, ground black and red hot pepper)
salt to taste.

Cooking process:

Wash the rabbit carcass, previously soaked in water for about half a day, and cut it so that the pieces can be easily threaded onto skewers. Remove the seeds from it. Do not remove the ribs, because they are the most delicious, juicy and delicious parts of the dish. The ridge is of little use for baking. It is better to put it aside with the cut out bones - they will make an excellent soup. Place the pieces of meat in a deep container, add salt and pepper.

Then let's start preparing the marinade. The sour cream is mixed with thyme and mashed garlic, and set aside - let it infuse. While the sour cream sauce is infused, let's take care of the rabbit.

Cut the onion into large pieces, add to the rabbit and mix. The rabbit should soak in the onion juice for about half an hour. Then add the prepared sour cream marinade to the pieces of meat and again let the meat marinate in the sauce for about 90 minutes. The duration of marinating should not exceed 2 hours.

Place the marinated pieces of meat on skewers and bake, turning every three minutes.

The readiness of the meat is checked with a wooden stick. If the meat is easily pierced, and not blood, but clear juice is released at the puncture site, then the meat is ready! The rabbit is served immediately. It is advisable to serve the baked rabbit with any vegetable salad or chopped tomatoes with chopped herbs.

There are many options for preparing rabbit meat. For example, you can take a whole rabbit carcass, soak it, marinate it in the marinade described above, string the legs onto a spindle, wrap them in foil, and fry them over a fire or coals until cooked.

Or pepper the finished pieces of rabbit meat, add a little sugar and pepper. Wrap the pieces of meat in thinly sliced lard plates, secure with thread and fry on skewers like a regular shish kebab.

Then mix a little wine, grated cheese and egg yolk. Place the slices of lard with the meat on thick paper and pour in the prepared mixture. Wrap the paper tightly and secure the ends firmly. Bury the meat preparation in the coals and bake for about an hour.

Grilled rabbit - a meat dish for real gourmets

In spring and summer, everyone happily heads to the forest or to the sea to relax and enjoy a delicious barbecue. Any man probably has his own signature recipes, but it’s never too late to learn something new, especially when it comes to food.

So, if you are tired of the standard banal meat or chicken kebabs, then it’s time to try cooking almost delicious rabbit meat. This incredibly simple recipe will please you and all your guests. Grilled rabbit is easy to prepare, and you can cook it in several ways: by dividing the carcass into pieces using a barbecue grill or whole on a spit. We will look at both of these cooking methods.

Rabbit on the barbecue grill

To prepare a butchered rabbit, you will need the following ingredients:

  • carcass – 1 pc.;
  • onions - 4-5 medium heads;
  • mineral water – 800 ml;
  • barbecue spices – 1 pack;
  • pepper, salt - to taste.

Let's look at the step-by-step cooking recipe:

  • Cut the carcass into medium-sized pieces.
  • After this, they need to be rinsed well, placed in a bowl of water, and left to stand for about 4-5 hours in the water.
  • Peeled onions need to be cut into half rings, as thin as possible - this will help the meat to be better saturated with taste and aroma.
  • Place the meat in a saucepan, cover with onions and add spices. After this, simply pepper, salt the rabbit and add mineral water to it. Mix. Place the workpiece to marinate in the refrigerator for 5-6 hours (it is better to let it stand overnight).
  • Place the pieces on the grill grate, having previously greased it with oil so that it does not stick.
  • There is nothing special about frying - it is fried like regular pork or lamb. Don't forget to turn over periodically. The dish takes about 20-30 minutes to prepare.

Whole rabbit on spit

You can also cook a rabbit without cutting up the carcass. Such a rabbit on the grill will look much more festive on your table. So, prepare the following ingredients:

  • carcass – 1 pc.;
  • onions – 3 pcs.;
  • pork lard – 150 g;
  • any vegetable oil – 50 g;
  • garlic - several heads;
  • dry white wine – 150 ml;
  • thyme – 1 tsp;
  • chopped bay leaf – 1 tsp;
  • butter – 55 g;
  • pepper, salt, spices - to taste.

How to cook a whole rabbit:

  • Rinse and dry the carcass.
  • Pork lard must be cut into thin strips, and then stuffed into the carcass.
  • Peel the onions and finely chop.
  • Place the carcass in a bowl, add chopped onion, thyme, spices, and bay leaf. Then pour olive or sunflower oil over the meat, salt and pepper. To marinate, it needs to stand in the refrigerator for about 6 hours.
  • The rabbit is placed on a spit and placed over the grill so that it is entirely above the coals. First, it is fried for about 10 minutes, after which chopped garlic is added to the marinade and the marinade is poured on top. After this, you need to bake the rabbit for another 40 minutes.
  • After you remove the rabbit from the spit, brush it with butter, sprinkle with herbs and serve.
