Seasonings are flavoring substances that are added to food to impart taste, smell, and color. Some of them are even very useful, promoting the secretion of gastric juice. Such as parsley and dill add vitamins to dishes. But I want to talk specifically about one seasoning, which is called Mivina “Chicken” seasoning. It was chosen by most housewives because of its ease of use and is now the top seller among seasonings. It is very convenient to use mivina; I added it to a dish and got a pleasant taste and aroma. It is used for preparing first and second courses. Even I have one and occasionally add it mainly to first courses to enhance the taste.

The composition of the seasoning includes kitchen salt, food mixture for seasonings (corn starch, premium and first grade wheat flour, palm stearin, garlic, emulsifier soy lecithin), flavor and aroma enhancers (glutamate, guanylate and sodium inosinate), sugar, dried vegetables 3 .4% (carrots, onions, red sweet pepper), maltodextrin, flavorings (white chicken meat, chicken), hydrogenated vegetable fat, dried herbs 1.2% (onion, parsley, dill), acidity regulator citric acid, riboflavin dye , dried chicken meat. The composition is simply terrible and this seasoning itself is harmful, especially if you use it instead of salt. With such seasoning it is easy to get a stomach ulcer. As they say, it’s better to drink some water, the benefits will be greater. Mivina is a trademark of the Kharkov company Technocom, which produces semi-finished products. Mivina itself leads to dire consequences; it has long been proven that it is very harmful and can lead to death due to chemical additives and genetic modification. Although it is officially approved for use. I use this seasoning very rarely, so it won’t cause any harm, but with frequent use you can not only harm yourself, I’ve heard that people get used to it, as if it causes addiction. In general, I do not advise anyone to add such chemicals to their dishes. What could be useful in this powder? It’s better to add dill and parsley, it’s healthier and safer.

If you carefully read the composition of chicken seasonings and do some research, it turns out that this seasoning itself is more like flavored colored salt with the addition of dried vegetables. Indeed, chicken seasoning is 70% salt. Of the “chicken ingredients” in the compositions, there is always a flavor identical to natural “chicken”, sometimes chicken fat or dried chicken meat. True, the numbers on the content of chicken ingredients (some manufacturers indicated them) are depressing: if 1% chicken fat is nothing, then 0.02% dried chicken meat in chicken seasoning is sad. So it’s up to the flavoring agents to depict the presence of chicken in the seasonings. The presence of dried vegetables and herbs is beyond doubt - they are clearly visible both in dry mixtures and when preparing broth from seasonings. Slices of carrots or sweet peppers along with dill create an attractive appearance.

In addition to the listed ingredients, all seasonings contain flavor enhancers, three at once: monosodium glutamate (E621), sodium inosinate (E631) and sodium guanylate (E627). To give seasonings and dishes with them a beautiful yellow color, dyes (riboflavin, sugar coloring) and turmeric are used. The fat content and richness of the broth is achieved by adding vegetable oils (palm and sunflower) or chicken fat, as well as starch.

This composition disappoints and scares many consumers. However, there are not so few consumers of chicken seasonings, which would be more correctly called chicken-flavored seasonings. Therefore, it was decided to test them after all.

TESTING
The dough contains 6 chicken seasonings: “Mivina”, “Pripravka”, “Aromatika”, “Rollton”, “Mriya” and “Torchin”. The seasonings were assessed for labeling and packaging, tested in the laboratory for several indicators, and tasted.

Labeling and Packaging
There were no complaints about the packaging of the seasonings, and not so much about the labeling. It is a fairly common occurrence that manufacturers do not indicate E indexes for food additives. A more significant note about the Mriya seasoning: the production date of this product is printed in light golden numbers on a golden background; they can be distinguished with great difficulty. Why not put the numbers in black ink?

Laboratory research
In the laboratory, the seasonings were tested according to several indicators. Salt content testing showed that the seasonings consist of 70-73% salt. Which, in principle, is not surprising: in all the tested seasonings, salt is listed first. Let us remind you that the composition of the product must be listed on the label in descending order, which means the ingredient listed in first place is the “biggest”.

The seasonings were also weighed to check the net weight. No underweight was found in any of the samples.

Another interesting area of ​​checking seasonings is determining amount of flavor enhancer(monosodium glutamate E621). It turned out that its content in seasonings reaches 3483 mg/kg. True, this flavor enhancer can be added to products in amounts up to 10,000 mg/kg. So, there were no violations in this indicator either.

In addition, in seasonings it was decided look for chicken. This applies to samples containing dried chicken meat: “Mivina”, “Pripravka” and “Rollton”. Such a search did not give a positive result - no chicken meat was found. However, this is most likely due to the fact that when drying the chicken, the DNA of the meat proteins was completely destroyed, so even the PCR method did not record anything. And the promised amount of chicken meat was too small.

Organoleptic evaluation
As for the tasting, it was decided to try the seasonings in the form of a broth, which was prepared based on the recommendations on the packages. There are no special requirements for seasonings. They just have to live up to their name. And although the seasoning could not boast of a pronounced chicken aroma and taste, no frankly unpleasant shades were noted. Comments on the organoleptic properties of seasonings are given in the table.
